Who doesn’t enjoy an ice lolly on a hot summer’s day!?
Joff would eat them for breakfast, lunch and dinner if he could… so I wanted to make some which where a little more healthy with less of the bad stuff, but equally as tasty and refreshing.
These ice lollies are made only with fruit, are low in calories and full of vitamin C. They look and taste amazing and were super quick and easy to make.
Recipe makes 6-8 ice lollies.
You will need:
1 small watermelon
- Scoop the flesh out of half the melon, removing as many black seeds as possible. Puree the flesh with a hand blender or liquidiser and add the juice of half a lime. Put the liquid through a sieve to remove any remaining seeds or pips. Pour into ice lolly mould until it is three quarters full (I bought mine from Amazon). Freeze for 3 hours.
- Scoop the flesh out of the kiwis and cut it away from the white core. Puree the flesh and then add to each lolly and refreeze for another hour.
Optional extra step:
When adding the kiwi layer, leave 1cm at the top and then freeze for an hour. With the remaining kiwi add green food colouring and add the final later to the lollies to look more like watermelon rind. Freeze for another hour. When they are finished the lollies will fade from dark green to light green.
