It’s summmeerrrr! It’s hot and we can actually get the BBQs out and eat outdoors which is my fave thing to do ever… is it just me or does food taste better when you’re outside?
I love BBQ food… not just the burgers and funky kabab skewers which always fill me with utter joy, but the sides and salads too! I love making light and refreshing sides during the summer months which can be paired with pretty much anything… from chunky bread to a full BBQ feast.
Inspired by last nights dinner, I thought I’d share a very simple salsa recipe which is cool, refreshing and colourful. Feel free to add some jalapenos and spice it up a bit, but on a hot summer day I’m all about cooling down rather than getting any hotter!
I paired the salsa with some nacho style crisps and homemade chive yoghurt dip, which is soooo easy and yummy, so I’ve put the recipe for that below too!
Two packs cherry tomatoes / 5 large fresh tomatoes
1 small red onion
2 cloves garlic
5 fresh mint leaves
1 handful fresh coriander
2 tablespoons fresh lime juice
Chop and mix all of the ingredients into a mixing bowl. Season to taste.
Chive yoghurt dip
1 cup natural yoghurt
2 Tbsp freshly chopped chive
1 Tbsp lemon juice
Mix all of the ingredients together. Serve with a sprig of chive (optional)
